Easy Charred Chicken Salad with Asian Dressing

Ingredients for the salad (Serves 6)
Combine in your favorite salad bowl,
1 Medium Napa Cabbage, shredded slices
1 Pack (1.5 pounds) sliced, charred and marinated Organic Chicken Thighs

2 Handfuls of shredded Red Cabbage
4 Full-size Carrots, shredded
1 Bag of Snow Peas, trimmed, cut in thirds
2 Red Bell Peppers, sliced
4 Cups Mandarin Oranges
1 Bunch fresh Cilantro, chopped
1 Bunch Green Onions, chopped
1 Small can of sliced Water Chestnuts
1 Cup Sliced Almonds
1 Bag (3.5 oz) Wonton Strips
2 Tablespoons Sesame Seeds
For the marinade and salad dressing, whip together the following.
1/3 cup Rice Vinegar
1/4 cup Soy Sauce or gluten-free Tamari
2 Tablespoons Asian Sweet Chili Sauce
2 Tablespoons Sesame Oil
2 Tablespoons Sugar
1 tablespoon Sriracha
2 Teaspoons Minced Garlic
1 Teaspoon Minced Ginger
1 Teaspoon Salt
1 Teaspoon Pepper
3 Tablespoons Olive Oil
Preparation Steps
- Measure 1/4 cup of the dressing and pour it over the chicken thighs to marinate. If you’re planning to chop the vegetables, this is a great step to do ahead of time.
- After marinating, char the chicken according to the instructions linked above.
- While the chicken is cooking, prepare the vegetables and combine them in a large bowl.
- Once the chicken is ready, slice it and add it to the salad bowl.
